Kids Favorites Recipe Exchange

Our recipe exchange theme was "kids favorites" this month.

I made Casserole of Beef and Rice. Our kids love it as do most kids I've had try it. My husband says it tastes like stuffed green pepper. I already posted the recipe in an earlier post.

My kids wanted to know why I didn't take lattyja. It's their absolute favorite.

Pizza

Title: My husband's Mother made homemade Pizza Crust while they lived overseas over the years when pizza was not available to her 5 sons.   It is now requested at every family gathering, especially for birthdays.

Ingredients:
1 c luke warm water
1 T sugar
1 T yeast
2 T olive oil
1 T salt, scant
3.5 cups white flour 

Hunt's Garlic and Herb Spaghetti Sauce


Directions:
Dissolve yeast in water with sugar.   Add remaining ingredients 
and knead.   Let raise 15-20 minutes. 
Grandma uses spaghetti sauce nowadays.   Maybe I'll get her
real sauce recipe one day.
Whatever toppings you enjoy.   She uses onion, green pepper, 
sausage, pepperoni, hamburger or  ground turkey, 
mushrooms, cheese, etc.  (I like artichokes, black olives and tomatoes.)
Bake 425 about 15-20 minutes.


Number Of Servings:2 pizzas

And I found this recipe in  my Mother's recipe book today.  I'm going to give it a try.  

Combine 1 tsp yeast, 1 cup warm water and 1 tsp sugar and let stand.
Mix into above ingredients into 2 1/2 c. flour, or a little more and a pinch of salt.  
Mix with spoons.  Let stand 20 minutes.  Roll out into pizza pan or cookie sheet.
Top with favorite fillings.
Bake 20-25 minutes at 375.

When I make rice, I want Karjalan Piirakka

If you give a mouse a cookie, he's going to ask for  . . . 

Yesterday I was making rice for lunch and it made me think of making rice porridge 
which made me think of Karjalan Piirakka. 


Then, I remembered my Mother recently talking about how she'd always wanted to try Karjalan Piirakka made with barley porridge filling, but she had never made it, which made me want to try it. 






For the Barley Filling, just follow the instructions on the package, but then add about 5-6 cups of milk to cook with it as well to make it porridge like you do for the rice porridge.



I attempted this with whole barley grain and it was a miserable failure.  I  guess that's why there is such a product as "Quick Barley" because I  cooked the other all day and it still wasn't ready and when it was I never could get it like a porridge.  








Here you see the different looks on this cookie sheet full with some barley ones and some rice ones.  You can see the flecks in the barley and they are darker, especially in the picture above.

I read an old Finnish cookbook that even adds carrot in with the rice.  Yummy.  Sounds like Porkkana Laatikko to me. 

And of course you can use  mashed potatoes for the filling.  This is what they used during the war when neither rice nor barley was easily available.

Now my Mother suggests trying rutabaga filling.  I found this recipe blog, mainly Estonian  (cousins to the Finns), but a few Finnish recipes and one is for Karelian pasties. Check her out.  She confirms many fillings may be used!

Egg Gravy over Mashed Potatoes and Tilapia

I was cooking some tilapia in the crock pot when my Mother asked what I was going to serve with it.  She suggested Egg Gravy over mashed potatoes.  

She used to make egg gravy often.  I'd never made it because it was just something she would just whipped up.  I say that because she uses a wire ship to stir the gravy and would prepare it so quickly.  So, she talked me through it. Since she never really did cook from a  recipe, this is the best I came up from.  I even put the saucepan on her lap so she could stir it and teach me the correct consistency.  

Egg Gravy

Boil 3 eggs about 9 minutes.
Melt 1 T butter in a sauce pan.
Add some chopped onion to it. 
Don't let it get brown.
Add 2 cups milk
stirring continuously with a wire whisk.
Add 1/4 cup flour
stirring continuously until it thickens.
Stir in some salt and pepper to taste.
After you've peeled and rinsed the eggs, slice them both ways with an egg slicer and gently stir them into the gravy.

Serve over mashed potatoes.
A crisp green salad also goes so well with it. 

The most dangerous cake recipe in the world

5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
pinch of salt
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large mug

Add dry ingredients to mug, and mix well.  Add the egg and mix thoroughly. 
Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again. 

Put your mug in the microwave and cook for 3 minutes at 1000 watts. 
The cake will rise over the top of the mug, but don't be alarmed! 
Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to feel slightly more virtuous). 

And why is this the most dangerous cake recipe in the world ? 
Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!  I did not want you to miss out on this.  Our son has this memorized already!

Easter Bird Nests

Grandma made the traditional bird nests for us this Easter.  The recipe is rice krispie treats.  

She only uses 1/4 of the butter nowadays.  

She also wets her hands when she works with the stick treats.  

She quickly scoops them in to muffin tins and uses her wet hands to quickly spread them around.

ABC pasta

This week I received a fun invitation to a grocery bridal shower and the hostesses had used ABC pasta for some of the letters on it.  When our youngest saw it, he wondered what they were.  I realized that he had never had ABC pasta!  I was amazed at this as the older ones had, but such is occasionally the case with the youngest.  I should know as I am one. :) In reorganizing my cupboards today, I found some Cannery Soup Mix which has ABC pasta in it.  With a quick internet search I found this and am making it for him.  If you click on the title, you'll find a couple of other cannery soup recipes as well.  Enjoy!

Cannery Soup Challenge

So, you bought a two-year supply of the dried cannery soup. You went home, confidently whipped up a batch, served it proudly to the family—only to discover that it tastes just a bit like bath water. What to do?

1/2 C soup mix
2 C eight vegetable juice
1 C water
1 T lemon juice
1 T beef broth bouillon
1 T sugar
1/3 C shredded carrots
1/2 t chili powder

Mix ingredients and cook for one hour.

Canned Beans Taco Soup

I made this quick meatless taco soup for dinner and we liked it.  The hominy in it feels like the meat you leave out of it.  

When you serve it you may add salsa or ketchup or tabasco according to your taste, if desired.

Canned Beans Taco Soup
1/4 c. water  to saute the onions in
1 small chopped onion
3 cans (4 oz.) chopped green chilies
1 tsp salt (optional)
1 tsp pepper
1 can (15 oz.) pinto beans, rinsed and drained
1 can (16 oz.) lima beans, rinsed and drained (I used 1 package of frozen lima beans instead, but should have used half of that).
1 can (14.5 oz.) hominy, drained
3 cans  (14.5 oz.) stewed tomatoes
1 can (15 oz.) red kidney beans, rinsed and drained
1 pkg. 1 1/4 oz. ) taco seasoning
1 1/2 c. water 
Tortilla chips (optional)

In a large soup kettle, saute onion in water until tender.
Add all ingredients except chips; bring to a boil.
Reduce heat and simmer 30 minutes.
Serve with tortilla chips, if desired.
