Southwestern Chicken and Rice

I just tried this quick, simple recipe and our whole family loved the taste.  The taste of course will depend upon what flavor of salsa and seasoning packet you use.  It's perfect for one of those kid taxing driving nights.  Give it a try!

Southwestern Chicken and Rice

4 boneless, skinless chicken breasts, cut into small chunks
1 cup salsa
1 package taco seasoning
2 cups water
2 cups raw Minute Rice
1 cup Cheddar cheese, grated
Sour cream

Bring chicken, salsa, seasoning mix and water to boil in a large skillet.
Cover and simmer 10 minutes.  Return to boil.
Stir in rice and sprinkle with cheese and cover.
Cook on low heat 5 minutes.  Top with sour cream.

Carrot and Rice Casserole

Tonight is Recipe Party!  I've missed the last two months and I'm determined to go this time.

Our theme is Holiday Favorites.   Of course it wouldn't be Christmas without pulla, but I've already made that for them.  And we always have rice porridge and I've already done that for them.  So, when I asked my Mother what her holiday favorite is she named this casserole.  Of course there are other casseroles and many sweets too that are traditional and favorites.  I can hardly wait to make the Joulu Torttuja (prune tarts), but since I only make those once a year, so I'm not doing them yet!  Many of you listed your favorites on my Facebook page too.  I appreciate that.  I hear I need to try and make divinity for example and other candies. 

While my family gets frozen lasagna, I'm making this carrot and rice casserole for the ladies tonight.  Well, I hope I get it done in time!  I'm way behind schedule because I'm on the computer selling Scentsy as a fundraiser for our boys's gymnastics during the holidays!  

Title: Porkkana Laatikko (Carrot and Rice Casserole)

Description:
This is the traditional Finnish Carrot and Rice Casserole served at Christmastime in Finland.

Ingredients:
1 1/2 lbs. carrots, peeled and sliced
1/2 cup uncooked rice
1 cup half and half
1 egg, beaten
2 tablespoons brown sugar
salt to taste
2-3 Tbs. chopped almonds


Directions:
Boil carrots in salted water until done. Drain and save the water. Remove carrots from pan and add enough water, if necessary, to make 1 1/2 cups pour rest of of liquid back into the pan and let it come to a boil. Stir in uncooked rice. Cover and steam on low for 20 minutes. Meanwhile mash cooked carrots. Add half and half, beaten egg, and brown sugar, mixing well. When rice is done, stir into carrot mixture, adding salt to taste.  Pour into a well greased 1 1/2 quart casserole dish.

A great compliment for meat dishes, especially ham. Freezes well.

Number Of Servings: Serves 6-8.

Preparation Time: Boil carrots for 20 minutes. Bake at 350 for 45 minutes.

Kids Favorites Recipe Exchange

Our recipe exchange theme was "kids favorites" this month.

I made Casserole of Beef and Rice. Our kids love it as do most kids I've had try it. My husband says it tastes like stuffed green pepper. I already posted the recipe in an earlier post.

My kids wanted to know why I didn't take lattyja. It's their absolute favorite.

Casserole of Rice and Beef


I had a pound of hamburger thawing out in the refrigerator and with a green pepper from my neighbor's garden, and some food storage, I made a casserole dish my Mother often made us growing up.  She got it from Joyce, her neighbor during their Army days, and it's one I've always liked and that kids usually like as well.  

Casserole of Rice and Beef

1/2 cup dry rice
2 cups canned diced tomatoes or tomato sauce or a mixture of the two
3/4 to 1 lb. ground beef
1/2 green pepper, diced
1 medium onion, chopped (dehydrated can work as well)
dash of black pepper
1 tsp. salt
2 cans water from tomatoes

Sort rice, but do not wash.  (I love these older directions).  I also have heard now that you should wash the rice so that the arsenic comes off of it!  Melt 2 T butter (I still use this even in this Pam or EEOV era) in a frying pan.  Add dry rice, chopped onion, diced green pepper, salt, pepper and hamburger.  Brown to a rich golden brown.  Add tomatoes and water.  Let simmer in the covered frying pan (I only use cast iron nowadays) for 30 minutes.  Watch it so it doesn't dry out.  Serve with a dollop of sour cream.  

It also goes nicely with corn I think and/or green salad.

I given this recipe with canned goods when it is "food storage" bridal shower.  I give rice, canned tomatoes or tomato sauce with the recipe for their food storage.  Often I buy tomatoes that have diced green peppers in them so I can make it without buying a fresh green pepper. I've even given them canned corn too, so they'll have a side.  

NOTE:  Nowadays I like to make the rice in a rice cooker or use leftover rice.  I also often use already fried hamburger.  Just fry the rest together and then add in the rice and hamburger at the last.
